La complète on buckwheat galette
Definteley on of the most popular galette in France is, La Complète which consist of grated Emmental cheese, a slice of ham, and an egg cooked on top.

1 buckwheat galette
60 g of shredded Emmental or
1 slice of premium quality ham
Preheat a hot cast iron pan or stove plate and grease wipe with butter
Start making your Buckwheat galette, and as soon a you are finished spreading your batter, break the egg in the middle of the galette.
Right away, spread the egg white on the galette, as much as you can using a spatula.
add a handful of shredded Emmental cheese around the yolk.
Spread a few strips of ham on the cheese and around the yolk.
Fold the four sides into a "square", without folding over the yolk using your spatula.
brush the galette with salted butter using a brush.
