4 Buckwheat Crêpes*
4 slices smoked trout or
4 slices of smoked salmon
1 carrot
1 cucumber
7 oz (200g) Fresh goat cheese
1.5 fl oz (4.5cl) Liquid cream
2 pinches Fine sea-salt
Fresh ground pepper
Peel the carrot and the cucumber, then cut them into thin sticks.
Mash the fresh goat cheese in a bowl with a fork and loosen with a heavy whipping cream, season with salt and pepper.
Spread half of the fresh goat cheese on the Buckwheat Crêpe and cover with slices of smoked Salmon.
Add the rest of the fresh goat cheese on the trout and place the vegetable sticks neatly arranged horizontally and roll roll the crêpes tight.
Wrap the rolled Maki Crêpes in cling film and refrigerate.
Remove the film and cut the roll into sections. Serve.
