Details: Hinoki (Japanese Cypress) is highly sought after by knife aficionados and is the recommended cutting board material by none other than famed blade smith Bob Kramer. A soft wood, hinoki is much more gentle on the knife edge than a traditional wood board such as maple, cherry or walnut. This helps to keep the blade edge and requires less knife maintenance over time when using a hinoki cutting board. In addition to its qualities in the kitchen, hinoki has been used for centuries by Japanese nobility, who have used the wood in the building of temples, due to the natural durability. Possessing a uniquely high level of organic phytoncide compounds that prevent the growth of mold, fungus and bacteria, hinoki performs exceptionally well in water and the elements. This is why hinoki is almost exclusively used in the construction of luxury bath houses and soaking tubs in Japan. A rare wood, Thirteen Chefs sources and produces our cutting boards from FSC (Forestry Stewardship Council) certified hinoki. This means your cutting board is sustainably and responsibly harvested to preserve and ensure the future harvest of hinoki. Maintenance: Though typically dunked in water prior to use, we recommend using mineral oil with hinoki to help preserve the wood and prevent stains and warping.
